Vegetarian Noodle Soup

About this Recipe:

This is an easy to cook vegetarian soup. It is also very healthy and full of vitamins and minerals.

Main Ingredients:

Olive oil: 2 tbs
Onion: 1 medium, chopped (optional)
Celery: 1 stalk, chopped
Carrot: 1 large, peeled and chopped
Sweet potato: 1 cup, diced
Parsnip: 1, diced
Ginger: 1 inch piece, grated
Fresh thyme: 3 springs
Parsley: 1 spring, chopped
Bay leave: 2
Cooked noodles: 1-2 cups
Vegetable broth: 4-6 cups
Salt and pepper to taste


1. Heat olive oil in a pot. Satue onions, ginger and celery until onions are transparent.

2. Add the rest of the ingredients except noodles. Bring to a boil and then reduce heat to low. Cover and simmer until done.

3. Season with salt and pepper and add cooked noodles to the soup.
