Green Peas Soup

About this Recipe:

This is a very quick and healthy recipe. Fresh herbs and green peas make a refreshing soup.

Main Ingredients:

Frozen green peas: 1.5 cups
Milk: 1.5 cups
Chicken broth: 2 cups
Fresh parsley or cilantro: 2 tbsp, chopped
Fresh mint: 1-2 tsp, chopped
Fresh lemon juice: 1 tbsp
Onion: 1 medium, chopped
Garlic: 2 cloves, minced
Oil: 2 tbsp
Butter: 0.5 tsp
Bay leaf: 1
Salt and pepper: to taste


1. Saute onion with oil and butter in a large pan for 5 minutes or until soft.

2. Add garlic and saute 2 more minutes.

3. Meanwhile, bring the chicken broth to boil.

4. Add frozen peas, parsley, mint, lemon juice and bay leaf to the pan. Pour boiling chicken broth into the pan and cook for 2-3 minutes.

5. Season with salt and pepper and add milk to the soup. Cook for 5-10 more minutes.

6. Discard the bay leaf and let the soup cool for a while then process in a food processor until smooth.
